The buffalo (aka American bison) was a large quadruped native to Earth. Although once, as late as the 19th century, they existed in vast, unnumbered multitudes, the buffalo was aggressively hunted and had become extinct by the 23rd century.

After Jonathan Archer restored a damaged timeline, a herd of buffalo could be seen in the timestream as the timeline realigned itself. (ENT: "Storm Front, Part II")
