Chicken marsala is an Italian dish that is made with chicken and marsala wine.

Chef aboard Enterprise had a personal recipe for chicken marsala that was, according to Captain Archer, usually kept classified. In 2151 an exception was made and the recipe was given to Tavin. (ENT: "Fusion")

Chef later prepared chicken marsala in 2152, and was a dish recommended by Trip Tucker. (ENT: "Dawn")
