Max was a bartender in the Vic Fontaine holoprogram.

When Frankie Eyes and his mobster friends took over Vic's casino because of a jack-in-the-box program, he continued to tend bar. Tony Cicci called Max to witness Odo perform his arm stretch trick. After Odo performed the trick, Cicci ordered Max to set up a round of drinks. (DS9: "Badda-Bing, Badda-Bang")
