A saint is a person elevated to a special status in various religions, often for activities related to their faith.
In Vok'sha mythology, their greatest hero ate stones for 23 days in order to kill the beast of "hate." For this action he became a saint. (VOY: "Heroes and Demons")
"Saint" could also be used to refer to people who have done nothing considered morally or legally wrong. Benjamin Sisko referred to Alynna Nechayev as a "saint" when contrasting her with the Maquis, who were just "people." (DS9: "The Maquis, Part II")
