This ship was never named on screen, but it's schematic with the registry number (taken from Franz Joseph's Star Trek Star Fleet Technical Manual) appeared on the Enterprise computer displays in Star Trek II: The Wrath of Khan and Star Trek III: The Search for Spock.
The name is presumably a tribute to Hermes, the ancient Greek messenger-god although the name could be from the Royal Navy flagship HMS Hermes that led the British task force in the Falklands War in the late 20th century.(citation needed • edit)
