Heart of targ was a traditional Klingon dish consisting of a targ's heart, served on a bed of greens.

Commander William T. Riker tasted some heart of targ when he tried to acquaint himself with Klingon culture prior to his temporary assignment to the IKS Pagh in 2365. (TNG: "A Matter Of Honor")

Klingons believed that heart of targ brought courage to a warrior who eats it. In 2374, a holographic version of Moklor told B'Elanna Torres that ingesting heart of a sanctified targ was a required act in the Day of Honor ritual. (VOY: "Day of Honor")

The heart of targ was represented on screen by a real animal heart and other organs such as beef kidney, which property master Alan Sims got from a local butcher. (TNG Season 2 DVD special feature "Departmental Briefing Year Two: Production - Props")
According to The Klingon Dictionary (1992 edition) by Marc Okrand, the Klingon name for this dish is "targh tIq".
